Description

Ca’ Florian is the heart of Tommasi, our oldest vineyards, and the intimate and coveted place that we have called home since 1902. There could be no better place to honor our humble beginnings and no better way to do it than by dedicating this single-vineyard to our top Amarone Riserva. Just next door to the house where our grandfather Giacomo settled, are the family’s first vineyards. Here, we have preserved every living memory of tradition, from the “marogne” dry-stone wall terraced vineyards with the pergola veronese trellising, to the withering of the grapes on the “arele”, the handmade bamboo racks. Each vintage counting less than 9,000 bottles, conveys the core values of timeless simplicity and elegance in our winemaking. Forget it in the cellar for an unforgettable moment in a decade or two.

Tasting Note

A deep ruby red with garnet highlights, on the nose it displays an elegant and very complex bouquet, with notes of ripe red fruits (cherries, blackberries and plums) along with spicy nuances of licorice and bitter cocoa. It is full-bodied and austere on the palate, with rich tannins and a very long, splendidly fresh finish.


Serving Suggetions

A great “meditation wine” for drinking on its own, its full-bodied yet elegant style also goes well with game, red meats and mature cheeses.


Origin

From the Pergola Veronese-trained vines of the prestigious Ca’ Florian vineyard, in the hilly area of Pedemonte in the Valpolicella Classica zone.

Corvina 75%, Corvinone 20%, Rondinella 5%


Vinification and Maturation

Harvest and manual selection of the grapes in 5-6 kg crates. After further selection, the grapes are left to dry in a well-ventilated loft for 100 days on the traditional racks known as “arele.” The grapes are pressed in January and a slow fermentation then takes place for 30 days in oak vats, using exclusively indigenous yeasts. Maturation lasts 4 years, for the first year in barriques and for the subsequent 3 years in 35 hl Slavonian oak casks. Amarone Ca’ Florian then ages in bottle for at least a year.

The selected grapes are placed onto traditional Arele and then left to rest for minimum 110 days in a large dedicated open room, where a ventilation system mantains an elevated and constant air flow. During this period the grapes are constantly checked since we want to keep them perfectly healthy, without any mildew.

Vineyard

The vines are planted on small terraces called “marogne”, which are dry walls built with retrieved stone. This method of terracing greatly improves the drainage of rainwater. The soil type is mixed – the concentration of iron and magnesium is quite high, which is the primary reason for the darker color of the soil (which occurs when the two minerals oxidize). It also contributes to the production of aromatic precursors that lead to very dark red fruits, like black cherries and blackberries. The wines made are particularly suitable for aging.
